The crash happened at around 2.25pm yesterday, between Junction 7 for Harlow and Junction 8 for Stansted.
The victim, aged in his 60s, had been driving a silver I-Pace Jaguar, which had left the road shortly before the incident.
He remains in hospital with life-changing injuries, but is in a stable condition.
This stretch of the carriageway was closed for several hours.
Police are appealing for witnesses and dash cam footage to establish the circumstances.
Anyone who witnessed it, may have seen the Jaguar leave the road or driving beforehand, or who has any relevant dashcam footage is asked to contact police by calling 101, quoting incident number 640 of 1 March.
